Chef notes

Press them down really hard in the pan or they crumble when you cut them. Refrigerating before slicing helps a lot too. These are way better than store-bought. You can taste that they're actually made with real ingredients. Good for a snack or breakfast.

Ingredients

  • 2 cups rolled oats
  • ½ cup shredded coconut
  • ½ cup honey
  • 2 tbsp creamy peanut butter
  • 1 tsp vanilla extract
  • ⅛ tsp salt

Recipe

  1. 1.Preheat oven to 325°F. Grease a 9-inch square baking dish.
  2. 2.Spread 2 cups rolled oats and ½ cup shredded coconut on a baking sheet. Toast in the oven until browned, about 10 minutes. Transfer to a large mixing bowl.
  3. 3.In a saucepan over medium-low heat, mix ½ cup honey, 2 tbsp peanut butter, 1 tsp vanilla, and ⅛ tsp salt. Cook and stir until smooth.
  4. 4.Pour the honey mixture over the oats and coconut and stir to coat. Spread evenly into the prepared baking dish.
  5. 5.Bake about 15 minutes for crunchy bars, or less for chewy. Cool completely before cutting.
