Chef notes

Same idea as the blueberry cobbler but with peaches and a little cinnamon. The peaches get really soft and jammy underneath and the top turns golden brown. I think I liked this one even more than the blueberry version. Really good warm with vanilla ice cream on top.

Ingredients

  • Fresh peaches
  • Sugar
  • Lemon juice
  • Cinnamon
  • Cornstarch
  • All-purpose flour
  • Butter
  • Sugar
  • Baking powder
  • Milk
  • Salt

Recipe

  1. 1.Preheat the oven to 375Β°F. Cut butter into pats and place in a 9Γ—13 baking dish. Pop in the oven until melted, then set aside.
  2. 2.Peel the peaches, halve them, remove the pits, and slice into roughly ΒΌ-inch pieces.
  3. 3.Sprinkle brown and granulated sugar over the peaches in a large skillet. Cook over medium heat, stirring occasionally, for a few minutes until the sugars dissolve. Remove from heat.
  4. 4.Mix flour, baking powder, salt, sugar, and cinnamon in a large bowl. Pour in the milk and stir until just combined.
  5. 5.Pour the batter into the baking dish and spread toward the edges. Do not mix with the butter.
  6. 6.Spoon the peaches and any juices over the batter, spreading evenly. Leave some gaps so the cobbler topping can rise through.
  7. 7.Bake 40–45 minutes until golden brown and the topping springs back when lightly pressed.
