Same idea as the blueberry cobbler but with peaches and a little cinnamon. The peaches get really soft and jammy underneath and the top turns golden brown. I think I liked this one even more than the blueberry version. Really good warm with vanilla ice cream on top.
Ingredients
- Fresh peaches
- Sugar
- Lemon juice
- Cinnamon
- Cornstarch
- All-purpose flour
- Butter
- Sugar
- Baking powder
- Milk
- Salt
Recipe
- 1.Preheat the oven to 375Β°F. Cut butter into pats and place in a 9Γ13 baking dish. Pop in the oven until melted, then set aside.
- 2.Peel the peaches, halve them, remove the pits, and slice into roughly ΒΌ-inch pieces.
- 3.Sprinkle brown and granulated sugar over the peaches in a large skillet. Cook over medium heat, stirring occasionally, for a few minutes until the sugars dissolve. Remove from heat.
- 4.Mix flour, baking powder, salt, sugar, and cinnamon in a large bowl. Pour in the milk and stir until just combined.
- 5.Pour the batter into the baking dish and spread toward the edges. Do not mix with the butter.
- 6.Spoon the peaches and any juices over the batter, spreading evenly. Leave some gaps so the cobbler topping can rise through.
- 7.Bake 40β45 minutes until golden brown and the topping springs back when lightly pressed.
