Red velvet cookies sandwiched with cream cheese frosting in the middle. Same flavor as the red velvet cake but in cookie form. The cream cheese filling is the same frosting I use for the cake. I could eat it by the spoonful. These look really impressive and aren't that hard to make.
Ingredients
- All-purpose flour
- Cocoa powder
- Butter
- Sugar
- Egg
- Red food coloring
- Vanilla extract
- Baking soda
- Salt
- Cream cheese
- Powdered sugar
- Vanilla extract
Recipe
- 1.Sift the flour, cocoa powder, salt, baking soda, and baking powder into a bowl, whisk together, and set aside.
- 2.Beat butter and sugar with a mixer until creamy, about 2 minutes. Beat in egg and vanilla until combined.
- 3.Gradually add the flour mixture to the butter mixture on low speed until just combined.
- 4.Add the hot coffee and red food coloring and mix until evenly combined. Don't overbeat.
- 5.Fold in the chopped chocolate chips.
- 6.Refrigerate the dough for 30 minutes.
- 7.Scoop dough into 1-tablespoon balls, roll smooth, and place 2 inches apart on a parchment-lined baking sheet.
- 8.Bake at 350ยฐF until the edges are firm, 10โ12 minutes. Let cool on the pan 10 minutes, then transfer to a wire rack and cool completely.
- 9.Beat cream cheese and powdered sugar until smooth. Beat in milk or cream if desired.
- 10.Spread about 1 tablespoon of cream cheese filling on the bottom of half the cookies and sandwich with the remaining cookies.
- 11.Melt white chocolate in the microwave in 30-second intervals until smooth. Transfer to a zip-lock bag, snip the corner, and drizzle over the cookies. Freeze 15 minutes to set.
