A blondie is like a brownie but with no cocoa, just brown sugar and vanilla. I made the toffee myself: you cook butter and sugar until it turns deep golden, let it harden, and break it into pieces. The toffee gets melty and chewy when the blondies bake, and the flaky sea salt on top makes every bite sweet and salty. I cut them into squares before the chocolate drizzle dried so it smeared a little, but they still tasted great.

Ingredients

  • Butter
  • Brown sugar
  • Sugar
  • Eggs
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt
  • Homemade toffee
  • Chocolate (for drizzle)
  • Flaky sea salt

Recipe

  1. 1.Make the toffee first: cook butter and sugar in a saucepan, stirring the whole time, until it turns deep golden. Pour it onto parchment paper and let it cool until it's hard, then break it into pieces.
  2. 2.Preheat the oven to 350ยฐF and line a sheet pan with parchment paper.
  3. 3.Mix melted butter with brown sugar and sugar until smooth. Beat in the eggs and vanilla.
  4. 4.Fold in the flour, baking soda, and salt until just combined.
  5. 5.Fold the toffee pieces into the batter and spread it into the pan.
  6. 6.Bake 20โ€“25 minutes until golden on top but still soft in the middle. Don't overbake or you lose the chewiness.
  7. 7.Cool completely, drizzle melted chocolate over the top, sprinkle with flaky sea salt, and cut into bars.
